Rootin Tootin Soup

Ingredients
1/2 Tbsp Olive Oil (or alternative)1 medium onion1 red pepper1.5L boiling water4tsp Vegetable Bouillon Stock (or similar)2 large carrots1 med sweet potato1 large parsnipSeasoning to tasteFew tbsp Semi-skimmed milk (or leave out if making Vegan)
Directions
Makes 4 bowls.

1. Heat oil gently in a large pan. Add the chopped onion and pepper. Soften.
2. Prepare stock with 1.5L boiled water and 4tsps stock powder. Add to pan, along with chopped/diced carrot, parsnip and sweet potato.
3. Add seasoning if desired, bring to the boil and simmer until all vegetables are soft (i.e. fork inserted into them with ease).
4. Remove from heat and blend until smooth.
5. Add milk if desired, return to heat until warm and enjoy!
