Oatmeal, Yogurt and Cinnamon Mini-Muffins

1/4 cup plain yogurt1/2 cup vanilla coconut milk1 large egg1/4 cup vegetable oil1/4 cup light brown sugar1 cup all-purpose flour1/2 cup whole wheat flour1 cup quick-cooking oats1 tbsp baking powder1 tsp ground cinnamonpinch of salt
Preheat oven to 375 degrees. Makes 46 mini-muffins.
Mix wet ingredients together, then add sugar and mix well.
Mix dry ingredients together.
Add dry ingredients to wet ingredients.
Mix until just combined. Do not overmix.
Spoon batter into mini-muffin tins lined with paper or sprayed with non-stick cooking spray.
For mini-muffins, bake for 10 minutes or until toothpick comes out clean.
