* *Potato, raw, 0.5 large (3" to 4-1/4" dia.) * Spinach, fresh, 4 cups * Onions, raw, 0.5 medium (2-1/2" dia) * Olive Oil, 1 tbsp * Garlic, 1 clove * Cardamom, ground, 0.5 tsp * *Coriander leaf, dried, 1 tsp * Turmeric, ground, 0.5 tsp * *Cumin seed, 0.5 tsp * *Garam Masala, 0.5 tbsp * Salt, 0.25 tsp * Lemon juice, 1 tbsp
Peel and cube the potato, and cook in water till almost done.
Slice onion and garlic thinly. Fry in oil until starting to brown, add spices, drained potato and spinach.
Cook on stove top for another 10-15 minutes until done (if needed add a splash of water to stop sticking).
Serves 2 as a main meal or 4 as a side dish.
Eat with 1/2 cup basmati rice or 1 chapatti/roti (not included in calorie count).
