Gluten free Cranberry Orange Cornmeal Cookies

Dry1/2 cup brown rice flour1/2 cup Potato Starch1 1/2 cups organic yellow (finely ground) cornmeal1 T. Baking Soda1 T. Baking Powder1/2 tsp. salt1 tsp. cinnamon1 cup Brown Sugar2 tsp. xanthan gum 1 1/2 T. Orange zestWet1/4 Cup olive oil1/2 Cup unsweetened applesauce1/4 cup plain yogurt1tsp. vanilla1 egg white1 1/2 cups water (approximately)12 oz. bag rinsed cranberries (3 cups)
1. Preheat oven to 350 degrees F. Line cookie sheet with parchment paper. Zest two medium oranges.
2. In medium mixing bowl stir together dry ingredients.
3. In a small bowl whisk together wet ingredients except for the cranberries.
4. Pour wet ingredients into dry and stir in rinsed berries.
5. Drop by heaping tablespoon (literally, a Tablespoon measurement) onto lined sheet and bake for 15-17 minutes or until lightly golden and still slightly soft.
5. Transfer to plate to cool. Makes about 65 cookies.
