4 boneless, skinless chicken breasts14 1/2 oz canned stewed tomatoes1 Tablespoon chili powder15 oz black beans15 oz can whole kernel corn, drained1/4 cup chopped green onions1 small can diced chilessalt and pepper to tasteMonterey Jack cheese, shredded (optional)Sliced Avocado (optional)Slasa (optional)Cooked rice (optional)
Cook chicken , tomatoes, and chili powder in large non-stick saucepan over medium heat for about 30 minutes (or until chicken is cooked through).
Add beans, corn, green onion, and chilies. Season with salt and pepper. Simmer for 5 to 7 minutes (or until sauce is not watery and heated through).
Optional - Do all or none of the following:
Top with sliced avocado, monterey jack cheese & salsa
Makes 4 servings if you use 4 chicken breasts.
