Slow cooker fennel-crusted pork loin with pears

Ingredients
1 tbsp fennel seedssalt & pepper1/2 c canola oil2 lb pork loin roast1-1/2 lbs small potatoes1 large red onion, quartered3 firm pears, quartered and cored
Directions
Crush fennel seeds. Mix 1/4 tsp pepper, 1 tsp salt, fennel seeds, and 2 tbsp oil in bowl. Rub onto pork loin and place in bottom of slow cooker.

Mix together in bowl 1 tsp salt, 1/4 tsp pepper and rest of oil. Toss with potatoes, onion and pears and add to slow cooker.

Cook over low heat for 7-9 hrs. Makes 6 servings
