Split Pea with Smoked Turkey Soup

You will need:A BIG soup pot(about two gallons deep)16 oz bag of dry split peas1.5-2 pounds of smoked turkey wings(you can find in packages usually above the fresh turkeys; they will be cut so you can see the bone, marrow and the meat)2 cans carrots OR a 16 oz bag of baby carrots OR 2 cups carrots peeled and chopped3 tbsp pre-diced garlic in olive oil OR 4 cloves garlic peeled and diced2 medium onions diced or choppedSalt to taste(2 tbsp did it for us)
Fill pot with water, leaving about two inches from the top to allow for boiling.
Drop in the wings and add salt.
After about an hour, add the garlic and onions.
Boil until the meat starts coming off the bone when you stir it.
Pull at it with the spoon, and if it comes off easily, not sticking to the bone, continue to pull the meat of the bones with the spoon, and remove the skin and the bones from the broth.
During the boiling process you may have to add water so it doesn't boil dry.
If you are doing FRESH carrots, add those first.
After about 20 minutes, add the bag of split peas.
Cook until peas are tender.
If desired, let soup boil down until it is thick.
1 cup equals 1 serving.

I added celery and potatoes and thought it was delicious :) I also soaked the peas over night before using them... that step wasn't in this recipe, but every time I've made split pea soup in the past, the dried peas needed to soak before going in the soup. Overall GREAT recipe, will make again! :) - 8/4/11
