Broccoli & Cheese soup with Squash

2 (1 lb) packages Broccoli or a mixture of fresh and frozen4 Medium Yellow Summer Squash (can also use cauliflower or your favorite vegetable)3 (10.75 oz) 99% FF Chicken Broth12 oz. Light Velveeta Cheese Product, cubed2 tbsp. CornstarchSalt & Pepper to taste
1. Simmer chicken broth and summer squash for about 10 minutes or until squash is soft.
2. Add brocolli and cook for another 10 minutes, turning heat to medium.
3. Slice and cube Velveeta and add to soup - lower heat back to simmer.
4. Mix cornstarch with cold water and slowly add to soup. Can be increased until soup reaches desired consistency (will thicken as it cools). Add salt & pepper to taste.
Makes 8 large (about 1 1/2 cup) servings. Enjoy!
