Ingredients
Directions
2 cups flour4 large eggs2 cups fat free skim milk2 dashes salt2 tablespoons margarine (melted)10 slices sliced ham20 slices baby swiss cheese2 cans asparagus spears
In blender, put 4 eggs, beat, then add milk. Blend for a few seconds. Add flour and salt and butter, blend 30 seconds, scrape sides of blender container, then blend 30-60 seconds longer. Set aside. Plug in crepe maker. On plates separate ham slices on one plate, and cheese on another, asparagus on a third. Take a large dinner plate and pour crepe mix into it. Following manufacturers directions, make a crepe. After the first one is done, start a second, then wrap a slice of cheese, a slice of ham and 2 stalks of asparagus in the crepe. If you do it quickly enough, it becomes an assembly line. Make 10 crepes with ham, then the rest without for the vegetarians in the group.
I always wind up with extra crepe batter, but just dump it as it doesn't store well.
Makes 20 crepes, unless you have more cheese and ham and asparagus and want to make more. A serving is about 3 crepes.
