Vegetable Teriyaki Stir Fry

Ingredients
1/4 c. fresh spinach1/4 c. sliced celery4 med. baby carrots sliced diagonally1/2 c. fresh snow peas1/2 c. fresh mushrooms sliced1 t. of freshly grated ginger root2 T. teriyaki sauce1 t. olive oil
Directions
Heat olive oil in a pan on medium heat. Add carrots and cook for 5 minutes or until tender, stirring occasionally. Add ginger root, snow peas, and mushrooms and stir, cooking an additional 5 minutes. Add spinach and celery sauting for an additional 3 minutes. Mix in teriyaki sauce and simmer for a couple of more minutes. Serve over brown rice (rice is not in calorie calculation)
