Dijon Parmesan Baked Fish

1 fillet flounder or other white fish1 tsp dijon mustard1 tbsp parmesan cheese, grated1/4c dry bread crumbs, 1 tbsp butter or oil1/2 clove garlic, minced1/4 cup carrots, julienne1/4 cup leeks, julienne1/4 cup celery, julienne
1. Saute the carrots, leeks and celery until soft in 1 tsp butter.
2. Mix the remaining butter, crumbs, parmesan and garlic together.
3. Season the vegetables with salt and pepper and place them in the bottom of an oven proof dish
4. Place the fillet of fish on top of the veges
5. Spread mustard on the fish
6. Top with the crumb mixture
7. Bake at 350 F for about 10 - 15 minutes (depends on the size of the fish)
Serve with potatoes.
