Fritatta, Spinach Potato and Mushroom

6 small potatoes (14.5 oz)3 cups spinach1 teaspoon crushed garlic3 whole eggs3/4 cup egg whites1/3 cup 1% milk1/2 cup cheese (strongly flavoured)salt and pepper to taste (not included in nutritional information)
Salt and pepper the potatoes and mix any herbs you may want onto the potatoes... thinly slice and lay in a pie dish. Beat the eggs and egg whites until nice and fluffy and add garlic and salt and pepper to taste. Over the potatoes layer the spinach and any other random veg you may want to throw in... :) On top sprinkle the cheese. Put in an oven at 350 until firm about 30 mins.
