Scottish trifle

1 jelly roll or plain sponge cake1pk flavoured gelatine1 can fruit cocktail1can evaporated milk, 2 cups water, 2tbsp vanilla custard powder, 2 tbsp sugar (Custard Pudding)1 pint whipping cream,1 tsp lemon juice 1 tsp sugar0.5 cup unsweetened coconut (shredded)
line a deep glass dish with slices of cake. Add a layer of fruit cocktail. (Save cherries for decoration). Make gelatine using the juice from fruit and pour over cake. Leave to set in fridge. Make custard pudding and leave to cool. Add a layer of custard over gelatine. Whip cream with lemon and 1tsp sugar and add over custard. Decorate with coconut & cherries. Makes 12 servings
