Mandelballchen - German Potato Croquettes

4 c lightly fluffed mashed potatos2 egg yolks, beaten lightly2-3 Tbsp all purpose flour2 egg whites, beaten until soft peaks form1/2 c crushed almondsCanola oil for frying
Serving size 1/2c 8 servings
Maked mashed potatos as normal. Beat in egg yolks. Chill until potatoes can be handled easy, then form into 2" croquettes (oblong shape) and roll each in flour. Dip in the egg white and then the crushed almonds. Fry in oil preheated to 375 degrees until golden on all sides.
