Ingredients

    1 large cucumber
    1 tbsp onion, diced
    1 tbsp fresh green pepper, diced
    1 tbsp fresh red pepper, diced
    1 tbsp scallion, chopped
    1/2 tsp prepared stone ground mustard
    1/2 tsp apple cider vinegar
    1 tbsp milk
    1 1/2 tsp oil
    sea salt to taste
    freshly ground pepper to taste

Directions

Peel cucumber and cut in half. Remove seeds and cut into very thin slices. Combine in a bowl with onion, peppers, and scallion.

In a small bowl, stir together mustard, vinegar, and milk. Pour over cucumber mixture, add oil and mix well. Season to taste with s & p.

    I made this but mixed white and red rice vinegar. I also added some chopped tomatoes and some nonfat greek yogurt. I made a German meal for friends who are traveling to Germany next month and they loved it! It is best the next day, so make a day ahead! - 6/8/09

    I used rice vinegar (less calories) and and added thin strips of asiago cheese and zuchinni....
    that was after i tried this recipe. it was OK. but its a quick side dish on a hot evening
