Ingredients

    1/2 package PHILADELPHIA Neufchâtel Cheese 1/3 Less Fat
    Cheese - Swiss 2% MILK - Kroger's 5 slices
    Meat - Corned Beef - Sara Lee - Deli - 1 pack (10oz)
    16 oz good barrel curred sauerkraut (without sugar)
    Dukes Mayo, 6 tbsp
    Hellmann's Canola Real Mayonnaise, 2 tbsp
    Ketchup - Heinz - One Carb, 2 tbsp
    Paprika, .5 tsp
    Garlic powder, .25 tsp
    Onion powder, .5 tsp
    Salt, 5 dashes
    Splenda to taste ( if you like Bavarian Style kraut )

Directions

Run the corned beef through a food processor for a few pulses.


Add all ingredients to a small Crock Pot.


Warm through well. Do not over heat for an extended period of time, as the cheese will begin to curdle. I cook on the lowest setting, turn it up about 10 minutes before serving to bring to a slight bubble, then turn it back to low to serve.


Variations I've Tried:
** Add more low-fat swiss cheese, and less cream cheese for a sharper taste, or vice-a-versa for a creamer milder taste.
**Add a bit of a low-cal dark beer for reducing thickness if you omit some of the mayo.

I really like mine topped off with a few carraway seeds. For a stronger flavor, add a sprinkle of them to the crock pot while cooking if your guests can all eat seeds.

Serve with hearty rye bread cubes, or small party-size rye or pumpernickel bread slices, lower carb Rye Crisp (sold near the Wasa Bread), or even lower carb tortillas lightly sprayed with non-stick spray and toasted with a few carraway on top.

This is a great low-carb party dip, but is too rich tempting made the way I like it, to make when in the house alone. If you must, eat with mild vegetables such as cauliflower or peeled broccoli stalks, and make it last for a few days :)

Makes around 4 cups of dip. A well rounded 1/2 cup serving is pretty generous. Enjoy!
