Gi's Rustic Chicken Noodle Soup (1 serving = 2 cups)

2 lbs. chicken breast with skin and bone64 oz. Kirkland Chicken Broth64 oz. Water1 cup celery diced2 cups zucchini squash diced.5 cup red pepper diced1 onion diced1 cup carrots peeled and diced1 can Ro-tel Original Diced Tomatoes & Green Chilies1 clove garlic finely diced
Put olive oil and chicken in large stock pot and sear the chicken on both sides until golden brown. Remove chicken and put to the side. Add garlic, onion, squash, carrots, celery and bell pepper into same pot and cook until wilted. Put chicken back into pot and add stock and water. Cover and bring to a boil. Lower heat to simmer and cook for 90 minutes. Remove chicken and set aside to cool. Add seasonings to taste. Remove meat from bones and chop into small cubes and return to soup. Add noodles to soup and cook until they are al dente.
