Dairy-Free Cornbread

Ingredients
cornmeal - 1.25 cupswhole wheat white flour .5 cupswhole grain (or whole wheat) flour .5 cupsbaking soda 1.5 tspbaking powder .25 tspsalt , .5 tspvanilla soy milk 1.5 -- 1.75 cups balance buttery spread or soy butter spread .25 cupscreamed style, frozen, fresh or canned corn .75 cups(cook the fresh corn in the soy butter/balance buttery spread*** if you use fresh corn, add 2 Tablesspoons of honey or organic sugar -- this will increase the calories by about 30 per slice
Directions
preheat oven 400 degrees

mix all dry ingredients
add in soymilk, butter spread/soy butter - mix well
add corn and mix well

generously spray nonstick pan with 100% natural canola oil

pour batter into pan and cook for about 15-20 minutes on the lowest oven crack

makes 16 pieces

serve warm with jam, jelly, honey, butter spray, or enjoy plain with warm milk, coffee, tea as a side dish for breakfast , brunch or lunch.
Also goes great with entree salads, stews and hearty soups
