Creamy Broccoli-white bean soup

Ingredients
Directions
Broccoli, olive oil, yellow onion, garlic, cannellini beans, vegetable or chicken stock, salt, pepper, and shaved parmesan for garnish
Steam broccoli florets and stems (optional) until barely tender. let cool and set aside 1/2 cup of florets for garnish.
Heat oil in pan and add in chopped onions and garlic, saute until translucent. Add drained beans and stock and cook until simmering. Remove from heat and add broccoli. Puree until smooth.
Season with salt and pepper, garnish with shaved parmesan and broccoli florets. May add toasted pine nuts as well.
Each serving was about 2 cups of soup.
