Mom's Vegetable Soup

Ingredients
22oz Ground Turkey (15% fat)1 tsp olive oil1 1/2 tsp basil leaves (dried)1 1/2 tsp black pepper1 tsp Kosher salt1/4 tsp thyme2 cloves garlic (minced)2 cans of tomato sauce (15oz)1 can diced tomatoes (15oz)1 - 2lb bag frozen mixed vegetables1 can green beans (15oz)1 onion - chopped1 large potato (peeled and diced)water - to cover all
Directions
1- In a large dutch oven, brown turkey with garlic and onions.
2 - add everything else and cook over medium heat until it starts bubbling. Reduce heat to simmer and cover. Stir occasionally.
3- I like to leave my soup simmer/low for several hours to a whole day.
