1 C millet2 C water1 tsp Seitenbacher vegetable broth (optional)Additional water for rinsing millet
Place millet in a bowl, and add water to cover by 2-3 inches. Massage it with your fingers for several seconds until the water turns cloudy. Put millet in a fine meshed stainer. Rinse with tap water until water runs clear.
Add millet to saucepan. Add 2 C water and vegetable broth. Bring to boil; then reduce to simmer. Cover pan and cook 25 minutes. Remove from heat. Let sit at least 5 minutes. Don't remove pan lid.
Fluff with a fork before serving.
Note: For a richer flavor, toast millet in a skillet before cooking.
