Muffin in a Minute (MIM) ~ Atkins Induction Friendly

Ingredients
(Nutrition information next to each ingredient is from the Atkins forum ~ see my note below)1/4 cup flax meal (8.09 total carbs, 7.6 fiber) 1/2 teaspoon baking powder (0.64 net carbs)1 packet splenda packet (0.9 net carbs)1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)1 large egg (0.6 net carbs)1 teaspoon butterNOTE from soonergirl99/Gina ~ I used Flax USA Cold Milled Ground Flax (from Costco) and my carb calculations were a bit higher than what was posted on the Atkins forum/message board.
Directions
Put the dry ingredients in a coffee mug.

Stir.

Then add the egg and the butter. Mix.

Microwave 1 minute (or more). Take out. slice, butter, enjoy.

Cream cheese would go nicely, too.

The shape of this can be changed by making it in a bowl.

It can be "toasted" once it's cooked.

The cinnamon can be replaced. I would imagine that any sugar free syrup could be added.

Some people count the flax as a carb/fiber wash, so then the net carbs would be 2.78.

    This morning for brunch I added about a 1/8 of a cup of blueberries, splash of heavy cream, and a tablespoon of almond flour. You have to nuke it for a little longer, like 1/2 a min.

    I used flaxseed meal also, and yes they are filling.I cut in half and spread cinnamon cream cheese on each half. I mix my own cinnamon cream cheese and use splenda to sweeten it. My daughter and I share the one muffin and even half is filling. This is a keeper! - 7/23/12

    I tried this for breakfast today with just a tweak or two. I absolutely love it and see HUGE potential by changing it to a savory muffin or as it is. It really helped me as I was tiring of eggs and bacon or omelettes for breakfast. Ate w/crm cheese and 2 slices crisp bacon. YUM! - 3/6/13

    I believe the calculations are wrong on this. The recipe calls for 1 tsp butter but if you click the link for nutritional breakdown it has 1 Tablespoon. - 11/6/13

    LOVE these! I also add 1 tblsp. of coconut oil - great way to get my good fats in. I even make chocolate ones...just add a tblsp. of cocoa. I only leave mine in the microwave for 45 seconds so they aren't so "dried out" - 4/28/13

    I love this muffin. Very filling. I eat half at breakfast with eggs, ham or bacon, and tomato slices and save half for lunchtime. I eat the other half with a hard boiled egg, cheese, and sausage stick on the go. Sometimes I add 1/4 tsp vanilla especially when I make it into pancakes. - 9/16/17

    OK, let's not drive people away with excess calories! At one time, the nutritional value was correct, but this recipe is now over the top at 324 calories! I think you used the nutritional values for 1 TABLESPOON of butter instead of 1 TEASPOON. Quite a difference. Total calories should be about 235. - 2/6/16
