Lentil Dal

Ingredients
1.5 cup red lentils1 bay leaf1 medium onion, diced1 (14 ounce) can stewed tomatoes1 tablespoon minced ginger (or 2 tsp ginger powder)4 garlic cloves2 teaspoons garam masala (try Penzie's online)1 teaspoon ground cumin2 tablespoons chopped cilantro1.5 teaspoons salt1/8 teaspoon cayenne
Directions

1) In a large bowl soak lentils for 10 minutes, with enough water to cover
2) Drain lentils, add six cups water to pot with bay leaf, and cook on medium for 15 minutes, or until lentils are soft. You might have to skim off white foam that forms.
3) In a medium frying pan, heat oil over med-high heat. Add onions, stirring occasionally until golden. (4-5 minutes)
4) Add tomatoes and cook until most of liquid has evaporated
5) Add ginger, garlic, garam masala, cumin, cilantro, diced chile, salt, and cayenne. Cover and simmer for 5 minutes.
6) Add (drained) cooked lentils to mixture and heat through.

* serve on basmati rice for an authentic meal
