Reduced cholesterol Chocolate Chip Cookies

1 C Whole Wheat Pastry Flour1/2 tsp Baking Soda1/4 tsp Salt1/2 cup Quick Oats6 Tbsp Unsalted Butter4 Tbsp Extra Virgin Olive Oil1C Dark Brown Sugar1 Egg2 tsp Vanilla Extract1C Semi Sweet Chocolate Chips.
Preheat oven to 375 F
In a large bowl stir together flour, baking soda, salt and oats until wll blended.
Cream butter, oil, and sugar together until light brown and smooth.
Beat in egg until incorporated and add vanilla. Add flour (if using a mixer keep it on low speed to avoid dusting the kitchen) a little at a time until well mixed. Unless using a kitchen aid stand mixer you will want to stir the chips in by hand.
Then place in 32 25g balls on baking sheet and bake for 10 minutes and allow to cool on rack, if your house hold will leave them alone. Remind them however that melted chocolate straight from the oven is reminicent of molten lava.
I like to have pecans in my cookies but didnt' this time, it would require a recipie recalculation and you could add some protien powder to help lower the sugar to protien ratio... and protien consumed with carbs helps lower the glycemic index.
