Feta Cheese, Carmelized Onion and Spinach Quesadillas

Ingredients
1 T Canola oil2 cups thinly sliced onion1 tsp sugar 3 cups spinach1 T water1 cup crumbled feta4 tortilla shells2 med tomatoes, thinly sliced
Directions
Heat oil in skillet over med hight. Add onion and sugar and cook until golden brown. Remove from pan.

Add spinach and water to pan and cook 2 minutes until wilted.

Assemble quesadillas. Cook until golden brown and crisp.
