1 - 15 oz package low-fat ricotta cheese1/2 c. Egg substitute, liquid (Egg Beaters),1 C Mozzarella Cheese, part skim milk, 1 package frozen chopped baby spinach1 1/2 T Granulated Sugar, 12 manicotti shells, uncooked 1 can diced tomatoes, slightly drained1 24 oz jar Three Cheese spaghetti sauce1/2 C Parmesan Cheese, shredded,
Combine cheeses (only half of total parmesan - leave remaining for mid-baking) with egg beaters, spinach (defrosted and drained), sugar, and seasonings to taste. Pipe in to uncooked shells using a gallon-sized ziploc bag with the corner cut off.
Layer 1/2 cup sauce in bottom of glass cooking dish. Place shells on top of sauce and top with remaining sauce and diced tomatoes. Cover and let sit in fridge overnight.
Heat oven to 400. Bake, covered, 40 minutes. Top with remaining cheese and bake an additional 15 minutes. Enjoy!
