Italian Sausage Soup With Tortellini

Ingredients
1 pound italian sausage1 cup chopped onionsgarlic to taste6 cups beef broth1/2 cup water2 cups crushed tomatoes1/2 tsp basil1/2 tsp oregano8 oz can tomato sauce1 1/2 cup zucchini12 ounce frozen cheese filled tortellini3 tbsp parsleygrated parmesan cheese
Directions
Remove sausage from casing and brown in dutch oven, add onions and brown. Add garlic, beef broth, water, tomatoes, basil, oregano, and tomato sauce. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat from soup Stir in zucchini, tortellini, and parsley. Simmer covered for an additional hour (longer the better). Sprinkle parmesan cheese on top of each serving.
