Ingredients
2 lbs ground chicken breast, skinless & boneless3 Tbls pure maple syrup3 Tbls onion powder1 Tbls paprika1 1/2 tsp garlic powder1 tsp dry sage1/2 tsp dry thyme1/2 tsp ground allspice1/2 tsp ground coriander1/4 tsp ground celery seed1/4 tsp cayenne pepper*salt & pepper to taste (I use 1 Tbls salt, no additional pepper)
Directions
Combine the dry ingredients to make the seasoning blend. With a Tbls of salt, I get about 1/3 cup.

Mix ground chicken breast, 3 Tbls maple syrup and the seasoning blend together.

Using a large "cookie" scooper, scoop the sausage onto waxed paper, about 3 inches apart. Cover with another sheet of waxed paper and press into a 3-4" round with a flat bottomed glass.

Freeze and then pack with the wax paper to keep them apart.

When ready to cook, plan on two sausages per person. Lightly season a nonstick pan over medium-low heat. Cook about 3-4 minutes until edges look done. Flip and cook another 3-4 minutes.

Enjoy!

Yeilds about 36 sausage patties.

I served these with biscuits and a lite sausage gravy to my Kiwi family. I was unsure how it would be received but it was praised and requested for Sunday brunch. I love this Southern favorite and now I feel so much better about having it regularly. Great recipe and great idea! - 6/30/11

I've been looking for a low-calorie, low-fat breakfast sausage. I'm not too fond of the store-bought breakfast links because I always find gristle in them (yuk). Thanks for posting this -- I'm looking forward to making them! I know they will be great! - 12/9/10
