Rocket, tomato and mozzerella parpadelle

Ingredients
1 clove garlic1 tbsp olive oil200g parpadelle pasta175g cherry tomatoes (halved)85g rocket150g mozzarella
Directions
1. Cook parpadelle according to package instructions.
2. Meanwhile, heat oil and add garlic, stiring for about 1 minute but making sure it doesn't brown.
3. Add the the cherry tomatoes and cook for about 2-3 minutes until soft.
4. Add the pasta and mix.
5, Add the rocket and mozzarella and stir until rocket is wilted and mozzarella melted.

Makes 2, 2 cup servings
