Vegitarian Southwestern Wrap

Ingredients
2 Extreme Wellness Whole Wheat Tortillas (8 inch)1 T Olive Oil1/4 cup canned sweet corn1/4 cup salsa1/4 cup cooked brown rice1 cup fresh spinach (torn)2 T light sour cream1/4 cup shredded cheddar cheese1/2 t Chipotle chili powder or 1/4 t of cayenne (if you want hot)1 T Cilantro (chopped)
Directions
Saute spinach and rice (must be already cooked...a great use for leftover rice) in olive oil for 2 minutes. Add salsa, corn, and chipotle chili powder. Heat through. Stir in cilantro and remove from heat.

Put 1 Tbs of sour cream and half the shredded cheese on each tortilla. Spoon hot mixture onto tortillas and wrap them like a burrito.

Makes 2 wraps.

For a slightly different flavor, add lime juice to the mixture after cooking.
