real simple maple-roasted chicken w/sweet potatoes

4 lb chicken cut into 8 pieces1 yellow onion cut into 1 inch wedges2 small sweet potatoes peeled & cut into 1" chunks2tblsp olive oil1 tsp kosher salt1/4 tsp black pepper3 tblsp maple syrup
1.Heat oven to 400'F
2.Rinse the chicken & pat it dry. Arrange the chicken, onion& weet potatoes in a 9X13" baking dish. Drizzle the oil over the chicken & vegetables &season w/the salt &pepper. Toss to coat. Drizzle w/the maple syrup.
3.Roast, stirring the vegetables once, until chicken is cooked through. About 1hour,15 minutes. Let rest for 10 min. before serving.
