Wilted Spinach

Ingredients
2 package (10 oz) spinach, fresh2 tablespoons extra virgin olive oil4 cloves garlic, sliced thin1 tablespoon salt1 tablespoon pepper, black1/4 teaspoon nutmeg, ground
Directions
Add olive oil to large stock-pot and heat on high. When the oil shimmers add thinly sliced garlic and reduce heat to medium. Cook until garlic becomes slightly brown and/or opaque. Add salt, pepper, and nutmeg and stir. Immediately add spinach and stir/rotate consantly while leaves wilt. Remove from heat when leaves all turn from bright green to dark and serve immediately.
