Hearty Veggie Soup

Ingredients
2 cup Bob's Red Mill Veggie Soup Mix1 cup Vegetable Broth6 cups Water1 cup Carrots, Chopped1 Celery Stalk, Chopped1 cup Zucchini, Chopped1 cup Broccoli Stalk, ChoppedAdd any veggies you have availableAdd fresh herbs and spices, salt and pepper to taste.
Directions
Combine all ingredients in a pot and let it simmer in medium heat until soft. (About 1 hour)
Makes approx. 5 servings (1 cup) depending on how thick you like your soup, just add more water to make it thinner or to make extra servings.
