Chicken Marsala

Approx. 1/2 cup flour for dredging4 small chicken breasts2 tbsp olive oil1/2 medium onion, chopped1 clove garlic4 crimini mushrooms, cleaned and thinly sliced1 cup sweet marsala cooking wine
Heat the olive oil over medium heat. I start with 1 tbsp of olive oil then add more as necessary because the mushrooms like to absorb the oil. Brown the onion, garlic and mushrooms in the olive oil. While those are browning, rinse and pat dry the chicken breasts and dredge them in the flour. Add them to the pain and let sear 2-3 minutes on each side. Add the marsala wine, reduce to a simmer, cover and let cook for approximately 15 minutes more or until the chicken is cooked through. Marsala wine is very low in alcohol content so don't worry about it reducing much.
Remove and plate the chicken. Use the back of a wooden spoon to scrape up all the cooked bits from the bottom of the pan. Add a pinch of sea salt and freshly ground black pepper, mix in well. Spoon a little of the mixture over each of the chicken breasts and serve. Makes 4 servings.
