Mushroom Stroganoff

4 tbsp butter or margarine2 onions sliced5 celery sticks, chopped6 cups button mushrooms1/2 tsp dried mixed herbs1/2 tsp dried basil1 heaping tbsp all-purpose floue1 1/4 cups brothS&P1/3 cup sour cream or plain yogurtchopped parsley to garnish
1. Melt the butter/margarine in large pan, add the onions and celery, and saute over a low heat until the onions are transparent.
2. Add the mushrooms and cook for 2 to 3 minutes, until the juices run. Add the mixed herbs and basil, stir in the flour, and heat for 1 minute.
3. Add the broth and seasoning, and cook gently for 8 to 10 minutes. Remove from the heat, stir in the sour cream, and adjust the seasoning.
4. Heat very gently to serving temperature, but do not allow to boil. Garnish with the chopped parsley and serve at once.
