Smothered Cube Steak

Ingredients
3 TBSP Flour1/4 tsp Salt1/4 tsp pepper4 (4 oz) Cube Steaks3/4 C Fat Free Low Sodium Beef Broth2 tsp Canoila oilCooking spray3/4 to 1 med onion, diced
Directions
Combine the first 3 ingredients. Dredge steak i flour. Reserve excess. Combine reserved four and broth in 1 C Glass measure or small bowl; whisk till blended.

Heat oil in a large skillet. Add Steak to pan. Cook 3 min each side. Remove from pan, tent with foil to keep warm.

Coat pan w/ cooking spray; add onion, saute 5 min till tender. Stir in broth mixture deglazing pan to loosen browned bits from bottom of pan. Return steak to pan. Bring to boil, cover, reduced heat, simmer 7 min till gravy thickens

Makes 4 servings

    This is so good!!
    I used whole wheat flour, and added 2 TB of brown gravy mix. I didn't have the broth so I made broth with 2 bouillon cubes in a cup of water. I added a little water as it thickened. - 12/6/13
