Curried Quinoa

Ingredients
1 cp quinoa1 1/2 tbsp olive oil1/2 onion (diced)1 tsp grated fresh ginger root1 tsp turmeric1 tsp coriander1/4 tsp gr cinnamon1 3/4 cups water1/2 cup fresh/frozen peasSalt to taste
Directions
Rinse quinoa (if required).

Place oil anddiced onions in a heavy saucepan. Saute for 4-5 minutes. Add ginger, chile and quinoa. Cook 1 minute, stirring constantly.

Stir in turmeric, coriander, cinnamon and salt. Stir constantly 1 minute.

Add water and bring to a boil. Cover, reduce heat and simmer for 15 minutes.

Add peas, cover and cook for 5 more minutes or until peas are hot and water is absorbed.

Fluff with fork before serving.

Makes 4 - 1 cup servings.
