ED's Baked Eggplant

Ingredients
1 eggplant2 onions2 stalks celery1 tbs olive oil1 can tomatoes diced.5 cup pitted olives2 tbs balsamic vinegar1 tbs sugar1 tbs capers1 tsp oregano1 tsp basil3 tbs tomato sauce
Directions
Serves 4
Combine diced eggplant in 1nch cubes, sliced onions and celery, oil tomatoes and tomato sauce in slow cooker on low for 4 hours. Stir in olivesvinegar, sugar, capers,oregano and basil. Cook for an additional 60 minutes on high. Season with salt and pepper.
