Egg & Spinach Salad

Ingredients
1 -10oz bag spinach fresh1/4 lg onion chopped2 hard boiled eggs chopped1 avocado chopped- not too softextra virgin olive oilred wine vinegarsalt & Pepper to taste
Directions
Put Spinach in large bowl. Chop veggies and add. Sprinkle alfalfa sprouts. Remove yolk from eggs & chop the whites. Mash yolks in a cup and toss in. Add olive oil & vinegar. Add salt & pepper to taste. Should come out as if a creamy dressing was added lightly.
