1 c. onions, chopped1 c. celery, chopped1 c. cabbage, chopped3 t. garlic, minced1 large potato chopped1/2 c. chopped green pepper1/2 c. chopped red pepper1 lb. ground beef1 c. peas1 c. corn1/4 c. Jasmine rice1 can Rosarita Refried beans, fat free2T. Bragg Liquid Amino 4 T. Olive Oil1 T. each of Salt and PepperTrader Joes 21 Seasoning Salute to taste
Brown ground beef, drain and rinse. In soup pot add 4 T. Olive oil, all fresh vegetables and saute until soft. If carrots aren't soft they will finish cooking in the soup. Add ground beef, rice and water . Add canned vegetables except refried beans. Bring to a boil and then lower heat to a medium until all is heated and rice is cooked. Add refried beans, seasonings(I like to add Trader Joe's 21 Seasoning Salute and Bragg Liquid Aminos last. Taste and if you like it a little spicier add some hot sauce. I like to cook my soup on low for several hours but once the refried beans and rice are cooked they tend to stick so watch it closely and stir often. Sometimes I add a can of diced tomato with chilies or some hot sauce. Serves 8-10
