28 oz boneless, skinless chicken thighsMarinade:1 cup light coconut milk1/4 cup lime juice1/3 cup honey1/3 cup light soy sauce3 cloves garlic, crushed2-1/2 TBS Chinese five-spice powderCombine marinade ingredients and allow chicken to marinate 15 minutes to several hours.Remove from marinade, place in a single layer on a broiler pan, and bake until cooked through, 20 - 30 minutes.While chicken is cooking, pour leftover marinade into a small pot and boil gently, until slightly thickened.Serve chicken with a spoonful of (cooked) marinade. Great with rice and broccoli!
Bake at 375 about 25 minutes. Makes 8 - 3.5 oz servings
