Ingredients
per person:3 slices sara lee delightful wheat bread( or any bread running 40-50 cals per slice)1 large egg.25 cups unsweetened applesauce.25 cups egg beaters( or similar egg substitute).5 teas ground cinnamon1 packet Stevia or Splenda.25 cups sugar free maple syrup( I use Vermont which only has 10 cals- but there are several that have less than 40 cals per quarter cup- any of the diabetic approved brands will do)
Directions
Toast bread until golden. Meanwhile in a bowl large enough to hold 1 slice at a time- mix egg, egg beaters, cinnamon and 1 packet stevia or splenda. Heat large non stick pan over med-hi.

WHen toast is golden take out and dip in egg mix- flip to coat then place in pan sprayed with Pam. Do this for each piece of toast. It only takes about 30 sec per side. To use any remaining egg- I re-dip cooked toast and cook again until all egg is used.

Mix applesauce and syrup in a small bowl and microwave until warm. Pour over toast and enjoy!

Makes 1 LARGE 3 piece serving!
