Low cal Zuchinni Bread

3 egg whites1 c. applesauce2 c. flour2 tsp. baking soda1/4 tsp. baking powder1 c. slpenda1 tbsp. vanilla2 c. shredded zucchini1 tbsp. cinnamon1 tsp. salt
beat eggs till frothy, add sugar, applesauce, and vanilla. Beat till mixture is thick. Mix together flour, cinnamon, backing soda, salt, baking powder then add to mixture along with zucchini. Pour into 3 loaf pans. Bake 350 for about 40 min. or until done. Let cool for 10 min. in pan.

I think I can take with what they have said and do some adjustments and have it come out. I plan on using whole eggs, 1/2 the splenda and adding flax meal to it perhaps 1/4 c. I think maybe baking a wee bit longer as well. Thanks it gives me a good start. There is always a way, perhaps a muffin? - 3/16/10
