Basic Muffin Base

Ingredients
1 cup whole wheat flour1/2 cup of soy flour3/4 cup your favorite fruit(I used thawed blackberries)rounded 1/4 cup of Splenda for baking2 tsp baking powder1 tsp baking soda3/4 cup water1/2 cup of unsweetened applesauce
Directions
Combine all dry ingredients. Add water and then remaining wet ingredients. Fruit should be added last. Mix well. If batter is too thick, add a bit more water. Spray a muffin tin with non-stick cooking spray and add batter 3/4 full. Bake at 400 degrees for 18 minutes. Use the toothpick test to make sure muffins are done. Enjoy!

    Its a muffin BASE. You are supposed to add your choice of fruit for flavor. Of course they are bland without the fruit. - 4/7/11

    Not enough flavor at all i didn't add in any fruit or nuts and i wish i had. I had to cover this in butter to eat it. Not something i wanted to do to a healthy muffin. I would probably not make this again. - 11/27/07
