Crustless Quiche

Ingredients
3 eggs6 egg whites1 tsp garlic salt2 cups of fresh spinach5 mini red and yellow peppers2 stalks green onion3/4 cup shedded cheese (I used cheddar but whatever you like will work)
Directions
Spray cooking pan with Pam or rub with olive oil. You can use a pie pan or a 9X9 square pan
In a food processor add veggies and pulse until it is finely chopped.
Beat eggs, egg whites and galic salt until frothy.
Pour in pan.
Add veggies (this works well with all veggies and/or meats you want to add). I have done mushroom, onion and broccoli.
Mix together
Add cheese over top and bake at 350 for 20 minutes or until a knife inserted comes out clean.
Top with chopped tomatoe or salsa
Note: I made this in a 9X9 pan and it was very thin about 1/2" thick. You could easily double the egg whites.
I could have used less cheese without sacrificing flavor.
Season it however you like it is a very flexible recipe.
