Vegan High-Fiber Protein Bars

1 1/3 cup rolled oats1/3 cup pure maple syrup3 tbsp unsweetened apple sauce1/4 cup unsweetened unsalted almond butter1 tbsp vital wheat gluten2 tbsp unsweetened almond milk6 tbsp ground flax meal1 scoop vegan protein powder (I used Vega Vanilla Chai)2 tsp ground cinnamon
Preheat oven to 350 degrees F. Lightly grease an 8x8" square baking dish with non-stick spray.
Combine all ingredients in a food processor until completely blended. Spread evenly in the prepared baking dish and bake for 15-20 minutes or until edges begin to pull away from dish and center is no longer sticky.
Let cool and cut into 8 equally sized bars.
