Irish Stew

Ingredients
1 boneless, skinless chicken breast2 Tbsp. Oil1 large onion, diced1 can (14oz) chicken broth, fat free1 can (14 oz) stewed tomatoes, undrained3 potatoes cut into bite size chunks3 carrots cut into bite size chunks1 can whole kernal corn, drained1 can cut green beans, drained1 envelope (8oz) Garlic and Herb dressing mix (Good Seasons brand)salt and pepper to taste
Directions
Heat oil in large skillet on medium heat. Saute meat and onions until brown. Add Broth, tomatoes, corn, green beans and dressing mix. Simmer for 15 minutes. Add potatoes and carrots and simmer for 45 minutes. You may also cook in a crock pot all day.
