Southeast Asian Salmon Delight

Ingredients
Dipping Sauce and Marinade2 Tbsp Hoisin sauce1 tsp peanut butter1 tsp grainy mustardjuice of 1 lime1 Tbsp lemon grass, chopped1 Tbsp ginger root, grated2 scallions, chopped1/2 tsp ground cumin1 tsp ground cardamom1/4 teaspoon ground cloves1 tsp ground coriander1/2 tsp cayenne pepper1 lb salmon1 cup jasmine rice2 cups chicken or vegetable broth1 Tbsp sesame seeds, toasted1 Tbsp scallions, chopped1 cup broccoli, chopped1 cup carrots, chopped
Directions
1. Preheat oven to 350 degrees Fahrenheit.
2. Mix together the hoisin sauce, peanut butter, lemon grass, ginger, mustard, lime juice, freshly ground black pepper,
3. Place salmon fillets on a piece of parchment paper and brush all sides with 1/4 cup marinade, reserving the rest to serve with the meal. Fold the parchment paper so that the salmon is sealed inside.
4. Bake for 30-35 minutes or until finished.
5. Meanwhile combine the jasmine rice and broth and bring to a boil.
6. Once the rice is boiling, cover and simmer for 20 minutes over low heat.
7. Steam the chopped broccoli and carrots.
8. Once the rice is cooked, let sit for 5 minutes, then stir in the sesame seeds and scallions.
9. Divide the rice onto 4 plates. Add one salmon fillet to each plate and place the steamed veggies on the place. Give each person a small bowl with dipping sauce. Enjoy!
