Black Bean Salad

Ingredients
* Beans, black, 2 cup (remove) * Avocados, California (Haas), 1 fruit without skin and seeds (remove) * Cilantro, raw, 4 tbsp (remove) * Lime Juice, 30 mL (remove) * Romaine Lettuce (salad), 2 cup, shredded (remove) * Spinach, fresh, 2 cup (remove) * Red Ripe Tomatoes, .5 cup, chopped or sliced (remove) * Yellow Sweet Corn, Canned, .5 cup (remove) * Peppers, sweet, red, raw, sliced, .25 cup (remove) * Radishes, 2 medium (3/4" to 1" dia) (remove)
Directions
In a large bowl, mash together the avocado, chopped cilantro and lime juice until blended. Add the rinsed beans, shredded lettuce and spinach, dice tomatoes, corn , chopped bell pepper and stir until evenly coated. Delicious on its own! (Also very good with a nice couple slices of grilled flat iron steak.)
