Spinach-Potato Scramble with Parmesan

Ingredients
2 tsp olive oil2 cups baby spinach1 cup (1 small) shredded potato (raw)1 large egg2 egg whites2 tbsp parmesan cheeseDash black pepper
Directions
In a skillet coated with 2 tsp olive oil, saute 2 cups baby spinach and 1 cup shredded potato until golden tender. Whisk together 1 whole egg and 2 egg whites; add to skillet. Top scramble with 2 tbsp grated parmesan chees and a sprinkle of black pepper.
